Finely chop the coriander and combine in a small bowl with the vinegars, lemon juice, garlci and cayenne pepper, mixing well to form the dressing.
Drain the sweet corn and kidney beans and mix together in a bowl. Finely dice the cucumber and spring onions, quarter the cherry tomatoes. Finely chop the parsley. Tear off the leaves from the baby lettuce and rinse in cold water, arrange on plates as a base.
Add the corn, kidney beans, cucumber and tomatoes to the dressing, mix well to fully coat then serve on top of the lettuce. Garnish with parsley to finish.
