Beef Noodle Miso

Ingredients

  • 1 good quality striploin steak with fat trimmed and meat cut into thin slivers
  • 1 x 250ml pouch of miso broth(cully and sully from Dunnes or a health food store brand) or make yourself with miso paste and boiling water
  • 2 cloves of garlic minced
  • A thumb size piece of ginger peeled and finely sliced
  • 1 red chilli sliced thinly with seeds in or out depending on how hot you’re feeling
  • 2 handfuls of spinach 
  • 10 chestnut mushrooms finely slice
  • 1 nest of any noodle of your choice, I use brown rice noodles 
  • ½ Juice of 1 lime
  • A dash of of light soy sauce
  • A dash of fish sauce
  • 1 spring onion1 finely sliced
  • Fresh coriander to serve

 

Method

1. In a large saucepan heat the miso broth over a high heat until simmering with the garlic, ginger, chilli and mushrooms for 6 minutes

2. Flash fry the steak in a drizzle of sesame oil if you have it or olive if not for 2 minutes over a really high heat until just brown and set aside while the broth is heating

3. Add the steak, spinach, noodles, soy, fish sauce, lime and spring onion and allow to hang out and come together for 2 minutes

4. Serve in large pasta bowls and sprinkle with coriander
