Chicken Steam-Fry

Ingredients

  • 200g chicken 
  • 1 tsp olive oil
  • 250mls water
  • 1 tsp. ginger
  • 1 tbsp. coriander
  • 1 tsp turmeric
  • 1 clove crushed garlic
  • ½ squeezed lemon
  • ½ cup sugar snap peas
  • 200g finely sliced cabbage
  • ½  yellow pepper
  • ½ red pepper
  • 1 large carrot
  • with 2 cups cooked buckwheat/ sweet potato noodles

Method

  1. Place the chicken into the pan with a little oil for 2-3 minutes. Add in enough water so that you can steam the chicken and vegetables together. Put cover on the pan and turn down to a medium heat.
  2. Stir in remaining ingredients.
  3. Simmer for 20 minutes until chicken is cooked through.
  4. Serve with noodles.
