Chilli Con Lentils

Ingredients

  • 1 small onion
  • 1 carrot
  • 1 celery stick
  • 1 red pepper 
  • 300g red lentils
  • 60g wholegrain brown rice
  • 1 tablespoon rapeseed oil
  • ½ teaspoon ground cumin
  • 1 teaspoon chilli powder
  • 600ml vegetable stock
  • 400g tin chopped tomatoes 
  • 5g fresh coriander leaves

Method

  1. Chop and dice onion, carrot, pepper and celery. Rinse the lentils in a sieve. 
  2. Bring rice to the boil, then reduce the heat to low and cover with a lid. Simmer for a further 25 minutes. 
  3. Heat the oil in a frying pan and sauté the vegetables until soft and lightly golden. Stir in the spices and cook for another minute.
  4. Stir the lentils into the veg mixture and pour in the stock and tomatoes and let simmer away for 30 mins.
  5. Season and serve with rice and coriander leaves on top.
