- 4 medium eggs
- 60 g baked ham
- 4 tbsp. chopped onion
- 4 tbsp. water
- Serve with 2 cup cooked spinach and 8 mushrooms.
- 4 tbsp. chopped red pepper
- Preheat oven to 175 degrees C. Grease muffin cups or line with paper liners.
- Beat eggs together in a large bowl. Mix ham, bell pepper, onion and water into the beaten eggs. Pour egg mixture evenly into prepared muffin cups.
- Bake in the preheated oven until muffins are set in the middle, 18 to 20 minutes.
