Mexican Black Bean Bites

Ingredients

  • 2 tins of pre-cooked black beans drained and rinsed   240
  • 2 large spring onions washed and finely chopped.  10
  • 2 cloves of garlic minced.  9
  • a bunch of coriander chopped  8
  • 1 red chilli finely chopped and deseeded.  18
  • juice of 1 lime
  • 1 egg.

Method

1.Mash all the ingredients together in a large mixing bowl with a fork or your hands and divide into 6 balls

2.Season well and pan fry in a little oil over a low heat for 2 minutes on either side

3.Freeze or store in the fridge for 4 days 

4.Serve with a little salsa and salad leaves for a yummy lunch
