Potato Garlic Soup

Ingredients

  • 1 sticks of celery roughly chopped 
  • 1 small white onion roughly chopped 
  • 4 cloves of garlic minced 
  • 2 medium rooster potatoes peeled and chopped into small chunks
  • 1 small bunch of spring onion roughly chopped
  • A small bunch of fresh parsley
  • A glug of love oil
  • 750ml of veg stock
  • Salt and black peps

Method

  1. In a large saucepan saute the onion, celery, garlic and parsley in a little oil
  2. After 5 mins add the potatoes and stock and cook for 20 mins until the spuds are cooked
  3. Then add the spring onion and simmer for 5 minutes, season, blend and serve as you like 
  4. Perfect for freezing
