Quinoa Kale Minestrone

Ingredients

  • 1 onion. 1 carrot. 1 celery all chunkily chopped
  • 2 cloves of garlic minced
  • 1 bag of washed kale
  • 100g of quinoa
  • 1 tin of chopped tomato 
  • A bunch of chopped parsley and basil 
  • 1 tin of cannellini beans 
  • Salt and pepper 
  • Juice of one lemon
  • 750ml of veg stock 
  • Dash of balsamic vinegar
  • Pesto to serve (optional)

Method

  1. In a large saucepan sauté the onion, garlic, celery and carrot over a low heat in a little oil until slightly soft 
  2. Add the tomato, stock and Quinoa and simmer for 20 mins
  3. Add beans and Kale, herbs, balsamic for 10 mins and season to taste 
  4. Serve with good shop bought pesto or basil leaves and grated parm if not vegan
