Quinoa Superfood Salad

Ingredients

  • 1⁄2 cup uncooked quinoa 111
  • 4 cups of rocket leaves 20
  • 8 baby cherry tomatoes 40
  • A squeeze of lemon juice Black pepper
  • 1/2 avocado 160
  • 2 tbsp fresh parsley.

Method

  1. Add 1 cup of water to uncooked quinoa. 
  2. Cook quinoa over medium heat and bring to a boil.
  3. Simmer for approximately 10-15 minutes or until tender and the liquid is absorbed.
  4. Once quinoa is cooked add vegetables and seasoning.
