- 1⁄2 cup uncooked quinoa 111
- 4 cups of rocket leaves 20
- 8 baby cherry tomatoes 40
- A squeeze of lemon juice Black pepper
- 1/2 avocado 160
- 2 tbsp fresh parsley.
- Add 1 cup of water to uncooked quinoa.
- Cook quinoa over medium heat and bring to a boil.
- Simmer for approximately 10-15 minutes or until tender and the liquid is absorbed.
- Once quinoa is cooked add vegetables and seasoning.
