Salad With Turkey/Chicken Breast, Chickpeas & Pesto Dressing

Ingredients

  • 300g turkey breast
  • 200g chickpeas
  • 4 tomato
  • 2 handfuls of lettuce leaves
  • 2 tbsp. parsley
  • 1/2 cucumber

Pesto dressing

  • 2 tbsp. pesto
  • 2 tbsp. lemon/lime juice
  • 1 tsp.  pepper
  • 2 tsp olive oil

Method

  1. Poach turkey breast for about 15 minutes. Remove, cut into bite sized pieces.
  2. Prepare pesto dressing. Combine pesto, olive oil and lemon and a pinch pepper. Mix well.
  3. Put the lettuce leaves on a plate, add chickpeas and tomato. 
  4. Add turkey pieces.
  5. Drizzle with dressing and garnish with parsley
