Salmon Avo Sushi Bowl

Ingredients

  • 1 cup white basmati rice boiled as per directions
  • 2 fillets of fresh salmon
  • 1 ripe Avocado sliced 
  • 2 big handfuls of baby spinach or kale leaves
  • A few dashes of soy sauce
  • A few dashes of oyster sauce
  • 2 cloves of garlic and a large knob of ginger minced
  • Sesame seeds if available

Method

  1. Mix the soy, oyster, ginger & garlic in small bowl & sit the salmon flesh side down
  2. Put the rice on to cook & allow to go for 20 mins and become quite sticky
  3. Place the salmon skin side down in a frying pan over a medium heat with a touch of olive oil
  4. Let the salmon skin crisp for about 5 minutes then reduce heat & gently turn the salmon over. Allow to cook out for another 3 minutes on a very low heat then set aside
  5. Drain cooked rice and place a lid on top to keep hot
  6. Throw the rest of the marinade into the pan with the spinach and allow to quickly wilt and toss in the sauce
  7. Plate up the rice with salmon on top and spinach and Avo on the side
  8. Sprinkle with sesame seeds and serve
