Salmon Burgers

Ingredients

  • 2 boneless salmon fillets 
  • 2 brioche buns 
  • 2 tbsp thai red curry paste 
  • 1 tbsp reduced sodium soy sauce 
  • 1 bunch coriander, chopped 
  • 1 tsp olive oil 

Method

  1. Pour the salmon, Thai red curry paste, soy sauce and coriander into a processor or blender and pulse until fully combined. 
  2. Take the mix out of the blender and shape into two burgers. 
  3. Heat the oil in the pan on a medium heat and cook the burgers for 5 minutes on each side. 
  4. Serve in the bun and with salad of your choice.
