Speedy Prawn Stir Fry

Ingredients

  • 1 pack of cauliflower rice from a bag of frozen (every supermarket has these now, so handy!)
  • A couple of tender stem broccoli roughly chopped
  • A big handful of kale destalked and torn
  • A big handful of baby spinach
  • 8 baby corns
  • 1 red pepper sliced
  • 300g or around 10 juicy king prawns deveined and shelled from any shop

Store cupboard:

  • ½ tsp of dried ginger, garlic and chilli flakes (of course you can use fresh but that’s more chopping and peeling so up to you)
  • A dash of light soy and a dash of rice vinegar/lime juice 
  • 1 tsp. Of honey (optional)

Method

 

  1. Lash all the veggies into a wok or large frying pan in a drizzle of olive oil and flash fry until the broccoli is just softened and the cauli rice has defrosted, the leafy veg will wilt in seconds
  2. Chuck in the spices and prawns and toss about for 2 minutes until the prawns are just pink
  3. Add the sauces and honey and toss about for 30 seconds and serve on a heaping mound of healthiness!.
