Spiced Roast Cauliflower Steaks

Ingredients

  • 1 cauliflower, with 2 steaks cut from the centre (largest part) 2½cm thick
  • ½ tsp smoked paprika
  • Small handful coriander, chopped
  • 1 tbsp olive oil
  • 4 sun-dried tomatoes from a jar, finely chopped
  • 2 pitted black olives, finely chopped
  • ½ tsp capers
  • ½ tbsp red wine vinegar
  • Optional: Sprinkling of toasted almonds

Method

  1. If using almonds, toast them first and set aside
  2. Set oven to 200°C and line a flat baking tray with parchment paper
  3. Place steaks on the tray and rub with a little olive oil and the paprika. Roast for around 15-20 minutes, until tender but not falling apart
  4. Make the sun-dried tomato salsa, by combining the olive oil, red wine vinegar chopped sun-dried tomatoes, olives, capers and coriander
  5. Remove steaks from the oven, drizzle over the salsa and serve with crusty bread. If using the almonds, sprinkle over the top of the dressed cauliflower
