Sprout/Kraut Bowl

Ingredients

  • 1 carrot peeled and grated  
  • 1 cup of sauerkraut or kimchi   
  • ½ red onion finely sliced   
  • 5 lightly boiled Brussels sprouts grated  
  • 1 cup of puffed quinoa or regular cooked quinoa 
  • A palm full of dried cranberries   
  • 1 fresh bunch of parsley and coriander  roughly chopped
  • 2 tbsp of rapeseed oil   
  • 2 tbsp of red wine vinegar   
  • 1 clove of garlic minced
  • 1 tsp of Dijon mustard
  • Sea salt and black pepper

Method

  1. Mix the oil, vinegar, mustard, garlic and seasoning together to a smooth consistency
  2. Assemble all the veggies and quinoa with the sauerkraut in a large bowl and mix in the dressing and cranberries
  3. Serve on a large plate with a little feta or protein of your choice or as is for a vegan lunch/supper
