Turkey Curry

Ingredients

  • 200g Turkey
  • 2tbsp curry powder
  • 200ml (1 tin) coconut milk
  • 1 onion
  • 2 cloves garlic
  • 1 tbsp grated ginger
  • 1 red pepper
  • 200ml chicken stock
  • ½  yellow pepper
  • 2 tbsp. tomato puree
  • 50g mangetout 
  • 1 courgette
  • 3 tbsp. coriander
  • 3 tbsp. basil(1)
  • Basmati  Rice (1/2 cup cooked per person)

Method

  1. Poach turkey for 15-20 minutes until cooked. Cut up into small pieces.
  2. Sauté garlic and onions for 2 mins. Add ginger tomato puree and curry powder and mix for a further 2 minutes.
  3. Add coconut milk, cut turkey, chopped peppers, herbs and vegetables. 
  4. Cook for 20 minutes. 
  5. Serve with 1/2 cup cooked rice per person.
