Turkey Curry

Ingredients
200g Turkey
2tbsp curry powder
200ml (1 tin) coconut milk
1 onion
2 cloves garlic
1 tbsp grated ginger
1 red pepper
200ml chicken stock
½ yellow pepper
2 tbsp. tomato puree
50g mangetout
1 courgette
3 tbsp. coriander
3 tbsp. basil(1)
Basmati Rice (1/2 cup cooked per person)
Method
Poach turkey for 15-20 minutes until cooked. Cut up into small pieces.
Sauté garlic and onions for 2 mins. Add ginger tomato puree and curry powder and mix for a further 2 minutes.
Add coconut milk, cut turkey, chopped peppers, herbs and vegetables.
Cook for 20 minutes.
Serve with 1/2 cup cooked rice per person.
