Ingredients
2 cloves garlic
50g chopped red chillies
1/2 tbsp. olive oil
2 tsp cumin
125g mushrooms
1 tin chopped tomatoes
200g/ 1 tin – kidney beans
½ courgette
½ red onion
2 tbsp. chopped coriander
½ avocado
Brown rice
Method
Fry cloves of garlic, onion and chopped red chilli in olive oil.
Add a pinch of cumin, chopped mushrooms and cook for five minutes, adding water if it sticks.
Add chopped tomatoes and kidney beans, stir and simmer for 10 mins. Pour into a serving dish.
Chop avocado and coriander and place on top.
Serve with 1/2 cup of cooked brown rice per person.
