Vegetarian Chilli

Ingredients

  • 2 cloves garlic
  • 50g chopped red chillies
  • 1/2 tbsp. olive oil
  • 2 tsp cumin
  • 125g mushrooms
  • 1 tin chopped tomatoes
  • 200g/ 1 tin – kidney beans
  • ½  courgette
  • ½  red onion
  • 2 tbsp. chopped coriander
  • ½  avocado 
  • Brown rice

Method

  1. Fry cloves of garlic, onion and chopped red chilli in olive oil. 
  2. Add a pinch of cumin, chopped mushrooms and cook for five minutes, adding water if it sticks. 
  3. Add chopped tomatoes and kidney beans, stir and simmer for 10 mins. Pour into a serving dish.
  4. Chop avocado and coriander and place on top.
  5. Serve with 1/2 cup of cooked brown rice per person.
