Wild Rice Feta Salad

Ingredients

  • 1 red onion finely diced 
  • 1 carrot grated 
  • 1 stick of celery grated 
  • 1 cooked beetroot grated
  • 1 pink lady apple diced 
  • A large handful of kale finely chopped
  • A handful of frozen peas defrosted in some boiling water for 2 mins
  • 1 pouch of Uncle Ben wild rice cooked in microwave 
  • A handful of fresh chopped parsley and mint
  • A small handful of toasted walnuts and pumpkin/ mixed seeds
  • The juice of 1 large orange, 1 tsp of dijon, 2 tbsp of rapeseed or olive oil and seasoning to taste whisked into a dressing 
  • 1 bag of mixed leaves 
  • A sprinkling of feta to serve {optional}

Method

  1. Mixed all the veggies together with the herbs and dressing in a large bowl and
  2. season well
  3. Serve over the lettuce and add extra dressing 
  4. Sprinkle with nuts, seeds and feta to serve
